wouldn't concessions and janitors technically work for the arena? or some other company

I know a security guard for the Heat that has one, so idk if it goes as far as janitor, but it seems to stop at Security Guard

The same employees who clean up and serve at Staples Center get rings, do they also work at Clipper games too?

Haven't you ever watched Pawn Stars? Everyone that is part of the organization gets a ring pretty much, but only certain people get the REALLY nice rings (players/coaches/important staff) and the rest get simpler rings, still of value, but they're usually just worth their price in jewelry as compared to the player rings which carry more value.
