What are some must see attractions during the day?

Your practically mentioning three different cities, even though SoBe & city of Miami are both part of Miami-Dade County, SoBe is pretty much for the tourists & those that live there. Actually, many that live there tend to go inland for dining & clubbing but don't let that stop you. You're a tourist, I say go to SoBe. And Key West is Monroe County and thats a totally different animal and party experience with 100's of Tiki bars and great seafood plus boating etc. Totally different than SoBe.
Not sure your budget, but if you can afford it dine at SoFi (South of Fifth street, that means restaurants South of 5th street are for the most part on more exclusive level, of course there's exceptions north of 5th, including Delano, the new millions of $$$$ renewed Fountainbleu hotel & others).
Many Heat and other pro athletes dine at Prime112 and of course Joe's Stone Crab (celebrating 100years), if you can endure a 2-3 hour wait at night. So if you can go there for lunch & you won't wait to be seated but you won't see much action either.
Also, I tend to see Double Decker buses without top, where they take tourist around SoBe & the islands but not sure if that's your thing.

If you wanna party or drink 24/7 then you inland like ClubSpace http://www.clubspace.com/ there's other clubs in that area as well, walking distance. Just be warned and don't end you in Overtown regardless of who you are, they know a tourist from a mile away and your vacation will turn sour quickly.
Basically here's how it goes down if you wanna party all night/morning/afternoon long, you leave your hotel to go to a club in SoBe at about midnite then stay there till 3 to 4am then you go inland and finish the night. The beach liquor license used to be like 6am but it changed to earlier due to so many complaints from those that live there.
Also, if you don't dress to impress or have like some smoking hot ladies with you get ready to be in line for while while others go in and the bouncers ignore you. I assume you will not known any bouncers so my suggestion is to buy a bottle and that will get you in much faster. When you get in your hotel depending on how good it is the concierge may give you some pointers or may know some one or get you on a list if they have one some no longer run a list.
Also, in SoBe parking is the biggest mission in the world and your car will get towed in a heartbeat. So the best thing is to leave your car in parking lot that charges $10-$15 weekdays for the day and $20 &up on weekends. Then rent a scooter or they even have a new BikeSharing program on the beach http://www.decobike.com/how-it-works

for the love of god dont do this unless money is a joke to you. 150 bucks to buy a bottle the same size as a kool-aid jammer. you can never go wrong with going to the fountainbleu and LIV. a couple of people i know also work at a chinese place called mr.chows, supposedly its like a celebrity haven if your into that kinda thing (lebron and wade are regulars as well as kim kardashian they tell me)

Guys can get into any club, as long as you're willing to buy bottles. I see it every night. If you don't want to spend lebron type money at a club and you want to go clubbing with a bunch of guy friends, pic one night of your trip where you will buy a few bottles and that will always guarantee your entry to the club. Call in and make a reservation just in case, to the clubs that may accept reservations, they might make you get there early though.
Or you can take the risk and just show up and ask for a table, but you might get a higher minimum of consumption and you're risking the tables being sold out.

It's a little further up the beach, but an interesting place that you might like (since I saw you were considering Nikki Beach) would be The Roof at the Townhouse:

Manshion and Clevelander are the clubs I've ended up at the most on the beach. However, I stay inland and do the downtown/midtown scene.
I tend to do Vagabond on 14th. Lots of dubstep and hip-hop, and full of college coeds (hipsters included). Also, Mikes (on the 9th floor of a building on 15th across from the Miami Herald building). On Tuesdays, they place as $2 drafts and bottles. I mean everything they have. Sam, Guinness, Stella, whatever. Great food prices too. There are lots of hipster/artsy joints in Wynwood, which is basically the area between midtown and downtown. Yelp it. PEACE.
There's Coral Gables/Coconut Grove too that might be worth checking out if you can get a ride there. There

South beach is pretty awesome if you've never been, just expect to spend a lot of money. Going out in the Grove or the Gables is good too. Key West is about a 2 and half 3 hour ride, but its a beautiful ride surrounded by water. The bars down there are great, not classly just your typical dive bar on an island. Also going up to Fort Lauderdale isnt a bad idea.
