I'd go with Murnau. There's just a decent amount of the horniness of Stoker, but overall it's a closer adaptation and I think the tone is right.
Edit: To be clear, when I say the horniness of Stoker I'm talking "Bram Stoker's Dracula" the movie. In terms of comparing to the novel I'd say it takes inspiration from all three sources but the feel of it to me seems closer to the novel than Coppola's got.
