Gomez is actually a solid striker when he found his goal instinct. The problem is for a club like Bayern Munich his playmaking abilities are way too bad. You really can't pass the ball at all (outside the penalty area) to him. He's going to make a bad pass and the ball is lost (saw it like at least 10 times again today).
When he's out of confidence he's like the worst striker in the world. He'll even miss 100% chances in front of the goal like lower amateur league strikers don't do and as stated above he does nothing to set up an offensive game.
Essentially, the problem about Gomez is that he's an old school striker. He's a big dude whose technique is way too bad for nowadays soccer. He is great when his teammates set him up in the penalty area. Doesn't do much to create own chances or help the team turn a game around, though.
Basically, all he can do is score. And if he (for whatever reason) doesn't score he's a useless player on the pitch.
Olic is twice the striker Gomez is when healthy. He runs, runs and runs. Robben and Ribery can actually pass the ball to him and he scores important goals rather than scoring many goals in already decided games. Olic is also much better at creating his own shots or assisting on chances for other players.
Muller doesn't have the physical presence of a striker. He's going to have to play either as a winger or together with a phyiscal striker.
Honestly, I prefer a healthy Olic by a mile over Gomez. Olic scores more important goals, he never gives up and his technique is also quite underrated.
