Don't worry Ruben will adapt. I'm very sad today cause Ruben was by far the best coach I've ever seen in Sporting (been watching since late 90s). He grew a lot in here too.

Our football director Hugo Viana is going to Manchester City. I don't think it's a given United will get the good players easily.
The main star, Gyokeres, has a very good relationship with Amorim tough. If he leaves to one of the clubs I'd bet on United.
I'd also bet on Amorim wanting Quenda to join United and possibly captain Hjumland (defensive midfielder). For the rest Idk. Geny is the other winger available but Idk if Amorim wants to take him with him, despite being very similar to Quenda. Nuno Santos is too old and is injured right now, so I don't see him leaving for either club.
Maybe the central defenders will be a target too. My favorite is Diamonde, he is very strong and fast. Inacio is not so good on defense but he's a tremendous passer and plays the ball forward very well. Zeno De Bast is very similar to Inacio, but just arrived at the club.
