Strip Clubs arn't my thing either but I hear the Safari Club is really bad ass. Apparently they have a pool and BBQ outside and you can actually swim with strippers...
If you're into gambling theres 4 smaller casinos in La Center Washington about 40 minutes north of Portland or Spirit Mountain and Chinook Winds closer to the oregon coast.

Be sure to check out some of the Eastside neighborhoods. There are some easy ones like Hawthorne/Belmont, Mississippi, and Alberta that you'll hear about. They're all worth at least an afternoon. If you're here on a last Thursday of the month be sure to go to Last Thursday on Alberta. It's a different vibe each week, but there is usually lots to do/see, eat/drink. It often just turns into a big street party when it's warm.
On the Westside you can always go up to 21st/23rd or the Pearl District. I have only been to the Pearl once or twice because it's a completely different feel than the rest of the city (think planned community/condos), but there are lots of higher end (read: expensive) bars and restaurants and the district serves its purpose well. 21st and 23rd have some nice shops and cafes, it would be a great place to take a lady if she's coming with you.
If you go to a movie, definitely check out the Hollywood Theater in the Hollywood district on NE Sandy around 42nd. If you're interested in music there are TONS of smallish venues to choose from. Oftentimes there will be music festivals as well. If the Rose Festival is going on when you're here STAY THE HELL AWAY FROM IT! Sorry, personal opinion.
IMO it's really just all about finding the little gems that make the city unique. There are lots of places you can find on a tourist map, but try talking to interesting looking locals and you'll find some adventures.
