In any given game there's only going to be a certain number of drafters who set aside a large portion of their available FGA for a center, and in a pool that is relatively deep those few spots are going to go to different centers.
The guy you refer to is quite costly, and not elite offensively relative to other all time great centers. Given the heavy FGA usage on perimeter talent, most people would rather get a guy like Dwight (who I know is yet another of your absolute favorites) for much cheaper.
In this game I see 4 drafters spending 15+ FGA on a center, and all of those guys are more skilled than he is- Shaq, Hakeem, Jokic, Embiid.

Agreed, although his 89 season isn't overly expensive at 16 FGA. Ranked 4th in MVP voting that season and 6th in DPOY voting. Had I picked Bridges, I would have likely used this guy as my starting Center.

I believe db drafts this guy the most. Wonder whether he would have still drafted Dream in round 1 had he known the other guy would have been available in the 8th round.

As for me, interesting question, but I usually don't try to plan this ahead. Maybe I should've gotten Luka KD and then draft Ewing, but as a central team piece, I would've probably grabbed him third round instead of waiting for a late fall.
