Off-ball stats I'd like to see:

A lot of players in the NBA are ball-dominant; players that need the ball in their hands in order to create or score. However, I think that a majority of a player's contribution can come from what they do without the ball, because no player has the ball in their hands all the time. It is hard or impossible to quantify the affect players can have on a game without the ball because we don't keep track of the little things players do that help a team.
Here's a few stats I've though about that could give a sense of a player's off-ball skills:
Successful Screens (SSs): Screens that create an opportunity for a shot. For instance, PnRs that result in a open look for the screened player or for the screener.
Saves: Kind of obvious, when a player keeps the ball in possession when it is going out of bounds
Stalls: Anytime a player has the ball for a certain number of seconds without making a move
And on the defensive side:
Out of Rotation Baskets: Baskets scored by the other team because a player was not in proper position
Forced TOs: TOs caused by defensive pressure, usually dead-ball TOs like a 5 second call
Charges/Offensive Fouls drawn: If not already counted
Shot Altered: A shot that was not touched, but was affected by the defense (ie, a player shooting around a blocker and missing)
And I'm sure there are more that I haven't thought of.
