Are most multiyear contracts guaranteed?

So a few types of contracts must be guaranteed

Yes, almost all of them. The biggest class of exceptions would probably be deals for rookie free agents or 2nd rounders, especially the 2nd year.

Follow up question, even for contracts that are not guaranteed, they become guaranteed after January 10th?
So players with 10 day contracts before January 10th are not guaranteed, but 2nd round picks which sign minimum contracts do become guaranteed after January 10th?

Yes, although note that 10 day contracts can't be signed until January 5th.
