I know the MAX years is 5 and it's 35% of the cap, but is it an all or nothing kind of deal?
What I mean is, can Giannis sign a "Super MAX" extension on a 1+1 deal or does he have to take the full 5 years to get that annual salary?

The salary for a supermax extention - being able to exceed 30% earlier than normal - is completely negotiable up to 35%. It can land at any number in-between 30% and 35%, if they so desire.
But the number of years is not negotiable. This extra latitude in percentage can only be done on a deal where it's for the full number of years allowed. All or nothing. The total years for such a deal is 6, which includes the number of years remaining on the current contract (including the current one).
