Our Burger King is doing a “Carolinas” range which I guess is hinting it’s from your area of the US. What do you guys think

https://en.wikipedia.org/wiki/Barbecue_in_North_Carolina

I'm afraid a debate over Carolina bbq sauce will irreparably divide the board. My father was from Eastern NC and my maternal grandmother's family was from Lexington. Needless to write, but I am a product of divorce. The style preferences are just too entrenched and incompatible. This is failing to mention that there is a whole other wrong style of bbq from SC as well.

Looking forward to fatlever's sauce rankings though.

SC born and raised until I left for the Army, but I lived on the border about 15min from Charlotte and had/have a lot of family in the Concord area so I claim to be well versed in all Carolina varieties.

My favorite by far is vinegar based, especially on traditional pulled pork. SC "Carolina Gold" is very good too but I like it better as a dipping sauce on things like chicken or as a binder for smoked stuff.

Tomato based stuff is fine, but more generic (albeit less sweet) similar to the inferior KC or Memphis styles.

Texas style is not BBQ.

I also judge a BBQ spot by whether or not they have fried okra.

1. Vinegar

2. Carolina Gold

3. Western NC
4. Memphis
5. KC

n/a Texas

I'm not that BBQ literate, but for me it's (1) vinegar, (2) mustard-based, (3) tomato-based.

Anecdotally, got some of this stuff recently and it's delicious: https://www.capitalcity.com/collections/frontpage/products/sweet-hot-mambo-sauce

My preference is vinegar based but I enjoy a variety. My second favorite is probably some type of sweet and spicy similar to the sauce that used to have it Sonny's bbq. But you can never go wrong with some Carolina gold on the side either.

That being said, what kind of sick m*********** would put mayonnaise on a hamburger that already had barbecue sauce on it?

I'm not a bbq expert and nowhere near the Carolinas, but the Indian restaurant close toe me has a cumin based mango curry dish that is better than any bbq sauce/rub Ive ever had. There is a rib place in the same town that is basically a shack under a bridge with a guy making ribs that has some pretty good bbq. Thats all Ive got.

How are we comparing barbecue sauce and curry? You can't compare those two things they're not even remotely similar lol. But mango Curry sounds pretty delicious right now.

idk lol. I haven't had much in the way of high tier bbq and Ive been going crazy about this mango curry dish recently. Probably one of the best things ive ever had at a restaurant. The flavor reminded me a lot of the bbq rub from the rib place I mentioned and it goes so amazing with the creaminess of curry. It blows my mind every time I get it. Ive heard the particular Indian restaurant is supposed to be legit, but its literally the only Indian restaurant Ive ever been to so I have no frame of reference.

Pulled pork is kind of overrated. Too much fat and it gives me heartburn. I'll eat it maybe twice a year.

Now turkey bbq is a legit damn game changer. Eat that stuff for Thanksgiving. I'll eat turkey bbq sandwiches for the rest of the week.

Turkey BBQ>Pork BBQ all day everyday.

See what you've done, Diop? Invited chaos to our otherwise perfectly harmonious message board!

catching up: Like most of the rest of you, I prefer a vinegar base. I'm partial to more of a Thai green curry, but Braggins' curry sounds delicious. Turkey bbq is interesting, but in a way that mentally trends negatively, I would like to try it, but don't believe I've ever seen it on a menu. I eat a pretty good amount of turkey.

My favorite of the regional dishes here is called relleno negro. It's this mole with charred chilis and an assortment of other spices, this weird meatball called a "but" (Mayan word so pronunciation is more like "boot" which is fun) that has a hardboiled egg yolk inside, often another whole hard boiled egg and turkey cuts. The best place nearby gives you a huge container with a bag of rice and a fat stack of tortillas for $185($9.01 usd today).

Just found out today my new neighbor is a girl who had a crush on me all throughout middle and highschool.

This is so awkward and so weird. I was never attracted to her always viewed her more of a joking buddy type. This also feels like some stalker ish she has a bunch of kids and a single mom. How did we end up neighbors 17 years later... :o

I'm afraid to tell my girlfriend lol pray for me. :D

Here’s what you do:

Mix equal parts of your favorite vinegar based bbq sauce and tomato/sweet bbq sauce with a whisk in a bowl

You’ll never look back. This is what woodlands in blowing rock did and I have a variation in our store (I add some cheerwine syrup but more vinegar too).

Also pulled pork is amazing. And it’s super simple to do at home, cooked overnight in your oven at 275 degrees. Buy a butt at the grocery store, put in a roasting pan. Add a quart of water. Rub the top (fat side) with salt, pepper, and Chef Paul’s Blackened Redfish Magic (my go to spice for everything, can be found in the grocery store).

The water is important so it doesn’t dry out and injects moisture into the pork. Then roast for 10-12 hours at 275. It shreds very easily and it’s better than any pork you’ll find at a bbq place.

But yeah, please try mixing eastern and western bbq sauces. It will be exactly what you are looking for.

Also Carolina gold bbq sauce is gross. It’s only good for chicken nuggets

OK, just saw the chatter over BBQ sauce and gotta weigh in. There are multiple delicious sauces, and I have enjoyed trying them all over America. Being from the NC foothills/mountains, we grew up on western style BBQ with the sweet tomato based sauce cooked into and blended with the meat. Then lived outside of Concord and had more vinegar based sauces everywhere. Some were delicious, some just OK. Ever had Lexington style BBQ? That is really yummy. Found in Lexington NC, a spicy cross between vinegar and tomato. Never a big fan of SC style mustard based sauces, but have had a couple that went a bit lighter on the yellow stuff and they were tasty.

Traveled a lot and now live back in the Midwest. I’ve have had Q and their unique sauces in Texas, Memphis, Florida, Louisiana, Colorado, many others. And of course Kansas City and St. Louis, the kings of Midwest BBQ. My favorite sauces are:

1. Western Style NC sauce
2. St. Louis Style (similar to KC but less molasses)
3. Lexington Style
4. Kansas City Style
5. Carolina Vinegar
6. Memphis Style
7. Japanese BBQ Sauce
8. Texas Sauce
I continue to wait...and hope...for the return to Hornet's glory.
