A good joke SHOULD be offensive. It should challenge the audience's intellect and take people out of their comfort zone. In truth, there's nothing more pathetic for a comedian to do than subvert himself for the sake of having more people like him.

But look at some of the other guys... Richard Pryor, Sam Kinison, Robert Schimmel, Dave Chapelle, that Japanese comedian I like but can't name because they all look alike... you know, the one with slanty eyes...
All of these comics are brilliant BECAUSE they don't "play it safe". They're willing to take chances and are all the more hilarious for it.

Racist jokes rely on "shock" value, the "I can't believe he just said that." It's cheap and easy.
You are correct that if you want to be succesful as a comic, making racist jokes is clearly an effective and profitable path. But I don't call something the best just because it is the most popular. Much of the success of racist jokes is shock and confronting uncomfortable situations, and less actual humor. Have you ever seen Chris Rock's movies? Without his crutch the humor isn't very good.
You are downright crazy that a good joke is offensive. It sounds like you are more into shock than humor. I used to have fun with the shock stuff but when you realize it does bother other people and that there is plenty of stuff to laugh at, why not just focus on the stuff that is funny but non-offensive?
It's not that hard. Why do people need racist humor so badly that it's OK for others to be offended/feel badly? Even if I reason out that they are being silly or "over sensitive" in the end I'd simply rather another human being didn't have to be hurt for me to laugh. There's plenty of other stuff to laugh about.
Good jokes have to be offensive? C'mon, just look at a thread like the BBall great moment Photoshop thread, there are a ton of funny jokes in there that aren't racist. I think the hardest I've ever laughed from the internet was in a 49erwebzone thread about Kwame Harris, none of it was offensive.
