Wilt is better and more impressive player than giannis but I think Giannis would be better suited for 1v1. Also strongly disagree with the notion that the bigger players always just backs up the smaller player time after time in 1v1 and that's why despite being a lebron fan I disagree with people that say that he would beat kobe 1v1 just because he's bigger. Also maybe this would happen if like, their life was on the line but in reality players just don't play 1v1 like that. The reason why I'm taking giannis is that he has way better face up, dribble game and can hit some shots.

Wilt Would be an absolute nightmare to anyone from any time period to score against, when switched on it would be game over in a hurry.
No way Giannis could stop Wilt from scoring on his own.
Giannis is a really good 1 on 1 prospect but in the end it only means Wilt would have to try just a little bit harder to absolutely dominate.
Nobody is getting close to Wilt 1 on 1.

Kobe vs LeBron is much different situation, because Bryant had that insane ability to make these tough midrange shots. Giannis doesn't have that ability and Wilt is the perfect type of defender to bother his release with insane length and jumping ability.
How would Giannis face up game work in one on one situation? Beating Wilt off the dribble is highly unlikely (that doesn't happen often in one on one games), Giannis perimeter jumpshot and pull-up footwork are mediocre as well. Of course, Giannis has that rare driving ability, but without additional momentum, it wouldn't be effective enough. All of his moves he's known for (euro steps, long strides) wouldn't work in this situation - not against someone bigger and longer than him.
Also, Wilt definitely could "hit some shots" as well. He literally lived on in-between area with fadeaways and different kind of hooks/finger rolls. If you mean longer shots, then again - I've seen Wilt taking and making jumpshots in practise without any problems. Even bad shooters can make open shots without any problems in pickup 1vs1 game.
The only advantage Giannis has is dribbling ability, which isn't that important in one on one games. I don't think it's enough, but maybe I'm missing something.

I would go Wilt too but who did Wilt go against as athletic as Giannis? Kareem possibly but Giannis is different. I think you are also discounting the talent of 7 footers in the league now with Embiid, AD, etc. Im taking a peak at the 65' Lakers roster and there doesn't seem to be as much height as most team these days when you look past a had full of great centers.

Russell was one of the most athletic players ever, arguably more athletic than Giannis or even Wilt himself
1965 Lakers had probably the worst center rotation in the league and they still had two athletic Giannis-sized (and black) centers, along with a (mediocre) stretch 5. They weren't amazing, but they weren't small and they were quite athletic.

Giannis is one of the best 3-5 players today, maybe even the best
Wilt was the best player and had his greatest season statistically 60 years ago.
Do people seriously consider that the best player 60 years ago was better than the best player today? Wilt is certainly an anomaly, he was a physical specimen but still when we are talking about players that far apart in time it is more meaningful to compare careers or excellence compared to their contemporaries.

It's definitely worse than today on average, but NBA had plenty of talent already back then. Besides, the biggest difference is related to thr evolution of strategies, which wouldn't matter in this case.
