I love a mix of stewed dark-meat chicken (cooked in lard) with poblanos and white onions. I fry the tacos dorado style, then stuff them with shredded lettuce, white and yellow cheese, Mexican crema agria, and then I like to top each one with a whole cherry tomato-- and plenty of taco sauce, of course (I use red sauce, even on chicken). It's simple comfort food that reminds me of the excellent hundred-year-old Mexican dining room downtown where we used to get our special dinner every Friday night when I was a kid.

Carnitas make excellent dorado-style tacos, also.

One of the easiest versatile Mexican dishes IMO (especially for beginners) is chicken tinga. It's fairly simple to make, but it tastes like something that is more complex and would take far longer to make than it actually does. Great on tacos, tostada, or just with tortilla chips.

Yes! I love tinga. I like it over rice.

I've never eaten it with rice, but with extra tinga sauce from the pan to soak into the rice, I totally get it being your favorite. Can easily drink tinga sauce it's so good.

I had incredibly low expectations for the Mavs after the Luka trade but this is even worse than I imagined. They may be getting another #1 pick. Also why the hell isn't Coop in the game for garbage time with a chance for some easier plays to build his confidence instead of having to go against the other team's best defender all the time because they're forcing him to play out of position?

It embodies his play so far this season-- much improved with lots of versatility, savvy, and confidence, but he has these stretches where he can't seem to help forcing shots.

Durant saw Okogie and Thompson ready to catch and shoot and said, Nah, Imma shoot a 360 airball.

Possibly the right choice?

it's just such a sweet contrast between the savor of the sauce and the mild clean flavor of the rice. I actually put the rice on top of the protein sometimes. Ha ha

I think it was Chuck Everett who said the the other day that Steph Castle is a big time player late in games/clutch time. He and Champaigne assisted Wemby in closing the door on The Rockets tonight

Castle is an absolute moron in the clutch. The TOs does every game at clutch time is ridiculous.

Same thing as why Giannis refuses to play center. It's hard to physically bang inside with centers, and dudes who mentally want to play on the perimeter are out of place as true centers, they just don't view the game in the way they need to to do all the little things you ideally want a big man doing.

Its also very physically taxing to anchor both offense and defense.
