I wanted to avoid everyone to be too prisoner of the moment, so I took last year's KAT.
Who's more valuable? Can Sabonis's better passing win against KAT's superior scoring? And what about the defense?

I'm way more impressed with what I've seen from Sabonis. Caveat is I mostly only watch Warriors games so I don't get too much exposure to either player. But Sabonis' feel for the game is what puts him over KAT for me - I always get the sense watching KAT that he's struggling to figure out where he should be or what he should be doing versus Sabonis who's quick, decisive, and self assured

It is a very interesting comparison but different settings. Domantas Sabonis has the entire offense run through him with a 2-man game of Fox and tons of shooters around the two of them. Karl-Anthony Towns is the primary spacing provider of his team(s) [particularly 2022 Minnesota with Edwards, Beverley, McDaniels and Vandervilt all struggling from 3 or being downright bad].

I would have loved to see Minnesota in an open and movement offense like the Kings but we have never seen such a thing to fully unlock his passing.

Sabonis for his superior playmaking & efficiency. I think Sabonis is also slightly better on defense, but I haven't gotten to watch him closely enough to have a strong opinion. KAT makes more mistakes that stand out to me on the whole, while Sabonis seems to play more within the team goals.

If salary gets added to the equation, then it's not even a close value comparison.
