You don't eat them raw, you just cook them fresh... they turn red when you cook them (hence the before and after) and you have to cook them with copious amounts of old bay seasoning.

It's a staple in the Chesapeake region... especially at the beach. You can catch them yourself easily as well using traps or just a fishing line, weight, bait and patience.
