Dope. My favorites:

A good NY Strip or Ribeye, finished in a hot cast iron pan for 30 seconds a side

Whole brisket, in multiple freezer sealed bags, circulating for three days and then finished over a Webber kettle and smoked for a couple hours. Best thing I've ever made. It was incredible. Seriously, I dream of it.

One of the more transformative proteins is chicken breast. It's usually dry and awful, sous vide it's juicy and flavorful.

Any issues with it being “too big”? I’m trying to decide between an Anova and the Joule and like that the Joule seems smaller but I don’t know how I feel about it not having an on board display.

We have a built-in microwave/vent hood over our oven, and it's too tall to slide under the microwave. We need to keep it on the front burners if we put it there. But the water doesn't get hot enough that you can't just set it almost anywhere. I guess it also depends on the height of whatever pot you're cooking things in.

As for storage, it'll fit sideways in any drawer that's about 6" deep.

Does it ever feel like it takes up too much room in your pot/container? Or is that not an issue? In the reviews I read a number of them seem to ding it for being larger than the Joule.

I've used a stock pot a couple times but I almost always use this:

I've cooked a whole brisket cut into thirds, multiple steaks, a pork butt...never had an issue.

Apparently some guys have been fkn around when working from home and didn't have enough experience to hide it like me. I told them, doesn't matter if you're sleeping to noon, pick up your goddamn phone and then go back to sleep. Geez.

So we all got pulled back in the office. It's technically illegal but the boss stretched the rules a little because we're some sort of essential service.
