I'm going to have to do this sometime soon. I picked up an Anova a month or two ago after you and a few other guys recommended it. I've only done filets and pork chops in it so far, but the thing is amazing! Dead simple perfect steak every single time. I can't finish the brisket with a grill or smoker, so hopefully the oven method still works well enough.
I know it's probably a sin for most people, but liquid smoke in the vaccuum bag can do a decent job of adding a little smoky flavor.
