What has happened to go to moves in the NBA?
I can't really think of anyone in today's NBA that has a go to move that I know he is going to do and that I know he will get a good look and have a very decent chance at making. A lot of players in the 80's and 90's had moves/shot attempts that they had perfected to the point that you knew it was coming and you knew way more times than not that it was not a wasted shot attempt. Short of saying "he's going to drive to the rim" or "he's going to hoist/force one up" I can't ever tell what's about to happen on the court anymore. Maybe that's a good thing and shows that today's players are more diverse and can score in so many more ways that they don't depend on a signature shot but I really miss the days of guys having a move that we knew was going to happen, the defense knew was going to happen and yet it always remained effective.

Marc Jackson-Backdown baby hook
Ewing-Baseline fade away
Malone-Catch and turn fade away
Kevin Willis-Left Block one dribble and hook (maybe not so effective haha)
Olajuwon-He had a few which may go against my argument?
McHale-Catch it high, never bring it down, turn and shoot
Barkley-Catch, clear out space with his ass and score
Gervin-The finger roll
I'm sure there are lots I'm leaving out (please add to the list) and I am probably not noticing some that today's players have (also please add) but in general I just don't see it anymore with any level of consistency.

Carmelo and Durants are not signature moves, they are just stop and shoot. That's something everyone does just not as well as they do. That's why I said not just somebody hoisting a shot.The Duncan bank is a signature shot and one that I definitely should have included.

That is a good one actually. When he catches it in a certain spot more times than not you know he is going to take that shot and more times than not it's a good shot. Kobe also has the Jordan style turnaround fade but I didn't include it because he misses too many of them (probably around 40% on those shots and has never shot over 47% for a year in his career)

Lebron has a go to move, it's when he doesn't have deep post position. He's on about a 45 degree angle from the basket on the left wing, just inside the 3 point line back to basket. He always turns and fades baseline.
He gets them in quite regularly too, so I think it fits your definition of a go to move.

Melo gets a ton of points with his jab step hesitation pull up jumpers. Plus his "take a jump shot, miss it, crash the glass, go up again, get blocked, tip it, get blocked, grab the board, get fouled and score" routine. Not a signature move I guess.
Dirk's one-legged fadeaway is a classic.

Aldridge's right shoulder turn-around fadeaway is a legit signature move that is very effective and can be unstoppable at times.
