Who would you guys take? Prime Kemp or Amare?

I'd take Kemp unless I already had a good defensive team.

Kemp was a better defender than Amare and his offense was suppressed by Payton and the depth of the Sonics... I'd go Kemp.

Kemp.

Amare is a better scorer, but not by as much as the stats would indicate, due to differences in system and pace. Kemp is the better rebounder, and a better defensive player by a huge margin.

I will say though--it seems from the stats that Amare takes care of the ball much better than Kemp, although I don't remember that Kemp was so turnover prone.

Prime Kemp was a better rebounder in an era marked by dominant bigs. From watching the two, he was a more dominant force in the paint than Amare. I wouldn't say Stoudemire is a system player, but as mentioned, the difference in their scoring stats is attributable to pace.
