I don't really think Ainge has been fleecing people in general, most of his trades have been a mixed bag aside from the couple famous ones, and few were clearly lopsided at the time. It's just that he recognizes his own leverage and doesn't give in when he doesn't have to, and he doesn't play himself when he's got the upper hand. Trading valuable things is when he's cleaned up.
Like you said that's what's happening here. The Knicks very much want a very valuable thing Ainge has, and nothing is pressuring him to give it to them. The Knicks can either pony up or delay things, but Ainge knows that Mitchell's value isn't really going to go down any time soon and that the Knicks would strongly prefer to have him ASAP. He's got the upper hand here for sure, and he'll hold it for a long time.
