OT Anyone else smoke meats? Cream cheese Favorites? Favorites? Recipes?
I've been smoking my own meats for a few years now, and my favorite is pulled pork;
10lb shoulder/Butt mustard binder. I use Meat Church seasoning, let it sweat for about 30min for it to really stick, smoke at 270° for about 5 hours, then wrap in a pan, with 3 stick of butter on top, season again, and cook a further 3-4 hours.
Pull that bad boy, then shred adding more seasoning, serve with a slaw, BBQ sauce of choice along with banana pepper rings on some buns.
Boring part of the season, so why not talk some smoked food? Got any game day specials?

I'm a big hunter and usually have all my stuff processed but post-retirement in two and a half years there's no reason not to do it myself, and smoking is definitely on the agenda.
Pulled pork is awesome. Generally speaking relative to the rest of the world the US has a fairly low appreciation for pork because our beef is so good.

I recommend a Traeger. I got the ironwood 885, and man, its easy, and using the pellets is a ton easier then using wood chips in a traditional smoker. Its stupid easy to use, the app is great, and there is a big selection of pellet types, to flavor your meat. I've got a Butt going right now, and I'm using mesquite pellets, and it'll be done around 5ish.
Also, one of my favorites is smoked cream cheese. Both savory(I call it my everything bagel cream cheese with parmesan cheese)or dessert style with cinnamon toast crunch seasoning(yes its a thing)with real CTC crushed on top, with a caramel drizzle, and nilla wafers, and graham crackers for dipping.
Get to smoking man!

Yeah my dad is goated with the grill I just never ask him to show me because he ain't a good teacher he acts like everything is common sense and simple lol. This is the easiest way to smoke food, period. It's one of those deals where the smoking isn't the hard part. I've been considering getting a Traeger (780 Pro Wifi that's $999 at Home Depot). My brother in law has one and every time we're over his meat is so much better than what I cook at home on my Weber propane grill. I've been busy building a cabin on our lakefront property up north but in the spring I'm hopefully going to pull the trigger and pick it up so we have it up there for weekends next summer.

Got my smoker for Fathers Day, its been great this summer.
I dont do the pellets.
Its old school, coals and chips in the bottom, steamer pan and a couple layers of racks.
Bubble hood with thermometer and hooks for hanging veggies n stuff.
This style of smoking is for the patient, i usually get a nice bottle of wine to nurse while im making sure to keep it close to 190° for hours. I infuse the steamer pan with lemon and herbs.
Anywho being a nightowl and nightshift worker its nothing for me to do these over night wknd sessions and the meats are to die for.
I dont do the pellets.

There's the trade-off. Now it still takes hours (I do my pulled pork for 10 hours, 2 stage)but it's easier in the sense of minding the meat, but you can get a little more fine tuned in terms of wood flavor, and nuance, in heat, and smoke with a traditional smoker.breezypeezy wrote:Got my smoker for Fathers Day, its been great this summer.

However you roll that smoke though, everyone should give it try, as the food is better then any restaurant, and leftovers are something you look forward to at 2:30 in the morning.
Besides that, if you want to really make any crowd happy, smoked items are always a hit

jealous of all you guys that have pellet smokers and such, i only have a propane bbq. i've used it a ton this summer but mainly just done all cuts of chicken and seafood. i've "perfected" my grilled calamari so octopus is my next goal.
i was at a bachelor party where we smoked a suckling pig though, it was amazing. made me really appreciate the low and slow approach, plus the smoky flavour it adds. for those that do smoke meats, would you have enough time to have something ready for like 1PM on football sunday?
i've also been making homemade pizzas. i prefer neapolitan style but unfortunately don't have a pizza oven (you need like 700F/375C temps) to make them properly so i just make do with a regular oven. definitely still need work on making the dough as i can't make it as airy as i like.
i'm not a cook by any means but i've recently gotten into making new dishes and trying new things so i love this thread

Heres the beauty of it. To plan for a 1PM start, I like to lower the temperature sub 200°f, like around 170°. You can smoke something for 10-15 hours if you want. that actually sounds amazing. is it hard to manage the heat if you're not attending it overnight or does it not make a big difference?
