that actually sounds amazing. is it hard to manage the heat if you're not attending it overnight or does it not make a big difference?
So on a pellet smoker, like the Traeger I have, it works flawlessly. I can control the temperature from my phone, so let's say you go to sleep at 10pm, and your brisket is going, but in 4 hours, you want to lower the temp. Set a target time, OR target temp, and it'll beep, and you can lower it in bed and go back to sleep.

The heat is always within 5 degrees of what you've set.

It also has pellet percentage, so you'll know when to add some more. You can also set it to just keep the food warm as well, when its done, or turn it off.

Like I said, it is without a doubt, the easiest way to smoke meat known to man.

Another advantage to smoking, if your like me and like to cook large portions and then snack on the leftovers thru the week,
smoked meats and fish stays good for much longer than traditional leftovers.
Dont cook for one meal, smoke for multiple servings and the last is as tasty as the first imo.
