Deeper so more strategic. You have to project which non great QBs might have great seasons. In a 10 team 1 QB league, every team has a great QB. It would be like having 1 RB. NFL teams really usually only have 1 main RB (like QB) and there are probably more good QBs than RBs, so 1 QB is kind of like having a league with 1 RB. I iknow that hasn't been standard over the years...and originally teams were more built for similar rosters as teams for skill positions.

I also do individual defensive players in leagues I set up instead of team D, which is pretty random.

Eh i don't understand it quite enough yet, but i feel 1QB is more competitive since you really have to evaluate which one to take rather than the two QB where you can get lucky. But hey, maybe it's okay too just not too popular yet so different strategies have to be taken into consideration in that one.

The additional argument is that QB is by far the most important real life position and is essentially minimized in non superflex leagues

DOT's RB's are kind of mid outside of Breece. But his receiver room is absolutely stacked.
