As I understand it teams are allowed to S&T a player but they can’t receive a S&T player back and still exceed the 2nd apron.

Receiving a S&T'ed player hard caps you at the first apron, sending a S&T player hard caps you at the second

I haven’t seen that anywhere. If you have that on a published cheat sheet or can better explain how please do.

But if Denver signs KCP for anywhere near Brown's salary, they automatically go into the 2nd apron. And if you're in the 2nd apron you can't send out more money than you take back. At least that's what I'm hearing on podcasts. From there, I would assume that you're over the 2nd apron either way. No? What am I missing?

A sign and trade, as I understand it, is a single transaction, so it's the post transaction number that is relevant. Regardless, as you say, that puts them over the 2nd apron, which would make the trade illegal It seems the only way around that would be to include Nnaji with KCP, which would leave them about $3 million under the second apron to fill out the roster (3 spots), which really isn't viable. With KCP, they have to either pay him what he wants to avoid the 2nd apron cap, and fill out the remaining spots with minimums or whatever they can get back for Nnaji, or sign and trade him for less salary coming back to avoid the apron issue. There is no good path forward here for the Nuggets.
