I made the NYT Italian Wedding Soup recipe tonight and man, this stuff is so good. Exactly what I was looking for. A little laborious but worth it.

Yield: 6 to 8 servings

For the Meatballs
1large egg
½pound ground beef
½pound ground pork
½cup Italian bread crumbs or panko
⅓cup grated Parmesan
3tablespoons chopped fresh parsley
2large garlic cloves, minced (about 1 tablespoon)
1teaspoon dried oregano
1teaspoon kosher salt (such as Diamond Crystal)
½teaspoon black pepper
Olive oil, for forming the meatballs

For the Soup
3tablespoons olive oil
1large yellow onion, chopped (about 2 cups)
3medium carrots, diced (about 2 cups)
2 to 3large celery ribs, diced (about 1½ cups)
2large garlic cloves, minced (about 1 tablespoon)
Kosher salt (such as Diamond Crystal) and black pepper
8cups (2 quarts) chicken broth, plus more as needed
½cup acini di pepe, ditalini or orzo
3cups packed baby spinach
Grated Parmesan, for serving

Step 1
Make the meatballs: Crack the egg into a large bowl and beat it lightly with a fork. Add the beef, pork, bread crumbs, Parmesan, parsley, garlic, oregano, salt and pepper. Mix gently but thoroughly, until incorporated. Coat your hands with olive oil, then form small meatballs using 1 heaping teaspoon of the mixture per meatball; transfer to a plate or sheet pan. You should have about 80 (1-inch) meatballs.

Step 2
Make the soup: In a large pot or Dutch oven, heat the olive oil over medium heat. When the oil is hot, fry the meatballs in 2 batches, turning occasionally, until mostly browned all over, 3 to 4 minutes. Transfer to a paper towel-lined plate.

Step 3
Add the onion, carrots and celery to the pot and cook, stirring occasionally, until the vegetables are crisp-tender, about 10 minutes. Add the garlic, 1 teaspoon of salt (or 2 teaspoons if you’re using low-sodium broth) and ½ teaspoon black pepper. Cook until the garlic is fragrant, about 1 minute.

Step 4
Return the meatballs to the pot, add the broth and bring to a simmer over medium-high heat. Stir in the pasta, lower the heat and simmer, stirring occasionally, until the pasta is tender, about 10 minutes.

Step 5
Turn off the heat and stir in the spinach until wilted. Taste and season with salt and pepper, if needed. (The broth should taste pleasantly salty.) Serve hot, topped with Parmesan. The pasta will continue to absorb liquid as the soup sits; you may need to add broth when reheating. Soup will keep for up to 5 days in the refrigerator or 3 months in the freezer (see Tip).

Tip
To freeze, cool soup to room temperature in the pot, then transfer to airtight containers and freeze for up to 3 months. Thaw overnight in the fridge, or run the container under hot tap water until the soup releases. Transfer to a pot and bring to a simmer, partially covered, adding more water or broth if necessary.

If you like beef stroganoff, give this a try:



I made it for my folks after the Badger game this weekend and it was a hit. I would say use whatever cut of beef is on-sale. For me that was prime sirloin and instead of taking three hours in the oven it only took two.

Only other modification I would make if I were doing it over would be to decrease the red wine by half and go with three cups of stock instead of four. The final result was still incredibly delicious but I thought it could have been slightly more richer with less liquid.

One genius move here is sautéing the load of mushrooms in olive oil and butter. Letting all the liquid evaporate so they could nicely brown is key to the recipe.

Overall this recipe was a huge hit and it's gonna get added to the winter holiday rotation.

I've decided to quit my job, I'm giving notice at the end of the month, Friday. I work in IT, I've been in this particular job several years. I like the work, I like my co-workers, I work about 75% from home, it pays very well. But I'm just tired of the corporate BS. I might do some gig work, probably not. I'm fortunate that I don't need a paycheck. I'm single and currently unattached. I can do what I want, when I want. I have an idea for an app using AI that I'm going to play around with. I can program apps but haven't used AI in any of them. I most likely will never be able to monetize it and that's fine. AI is going to change a lot of things over the next few years and I want to stay on top of it. I know if the company terminates anyone in my department they walk them out immediately since we have access to social security numbers, credit card numbers, etc... they don't want a disgruntled employee to have access. I'm not sure about the policy when someone quits. I'll guess I'll find out Friday. I've been thinking about this for the past year or so. I had decided to do it in April or May as the warm weather gets here. But I'm wrapping up a big project this week and it's best to leave now rather than start something new and leave in the middle of it.

Congrats on being able to make the decision on your own (I was laid off twice but was then able to retire on my own terms).

I don't know how old you are but enjoy having time to yourself. You can always rejoin the rat race if you want. Speaking only for myself, I know that I have zero desire to do so.

I'm really happy for you. I've had more than a few folks who've made similar decisions tell me that it's amazingly empowering, and after they walk out the door they're surprised by how much of a weight they fill lifted off their shoulders.

I had a friend who left somewhere they'd been at for >10 years explain to me that they didn't realise how much anxiety they carried around thinking in the back of their mind (paraphrasing here) they maybe hadn't fully handed over something, or had only done 99% of something, or had made a dumb comment that people judged them over. The second they walked out the door none of it mattered anymore and that built up anxiety went away.

I'm in the same position sir. I will be quitting in May. We are actually finishing up a big project so I think the timelines align pretty well as you've indicated. Working in engineering at a big corporate company is soul sucking. I also mimic you in liking almost everything (except the field im working in is not particularly interesting to me).

I'm also planning on figuring out something on my own. I know what i want to do there are just a lot of hurdles there and it'll take some time to figure out. I don't know if you've ever heard of cursor IDE but its basically VScode with AI integrated. Using it has been an eye opening experience for me in regards to AI. I was never really that worried about it before, but I'm starting to see the writing on the wall and want to try and frontrun it a bit. Thankfully i'm mostly debt free, have a good amount of money in investments, and great parents who will take me in while i change course.
