How many coaches have won without a great player? Not many, in fact, it's more of a fluke when it happens. I dare someone to say Pop considering Duncan is considered to be one of the best PF's of all time and had been a top 5 player in the league his entire career.

There is a higher chance in knockout football that a lesser talented team can fluke it by playing a defensive+counters game. Besides it would be a great insult to that Porto team if you compared them to the Bobcats. They were certainly a very good team with solid players throughout plus a few stars like Deco and Carvalho.
Mourinho also failed to win one CL with one of the most talented squad ever assembled which costed Abramovich excess of 400 million pound. He didn't even reach the final.
