First draft ever in a 10 man PPR league. I know my QB position is very weak (some players I counted on falling got drafted 2-3 rounds earlier than ADP and where I would have projected them at.) In addition I had the 1st pick in a 10 man snake draft.

I like Cutler's matchup Week 1 and will start him. I'm hoping some of my WR and RB will have monster week 1 performances, in which I can flip them for another solid QB.
Any suggestions on who would be the most movable assets on my team?

Trade a WR. You have 5 of them that should be starting every week. Personally, I like Decker more that Thomas, but I'm a ppr guy. I'd look to trade him as he seems to be very hyped up right now.

Ya...I was kind of pulling my teeth during the draft, some players were just too great of a value for me to pass up (or so I thought during the draft).
What kind of QB should I be targeting in trade for Thomas? I'm hoping some of my WR's have a great first week...perhaps I should target like a guy like Philip Rivers?

Philip Rivers isn't a bad target, but he isn't thaaaat much of an upgrade over Cutler, assuming you are a believer in Cutler having a strong season. If you are only willing to give up Thomas, chances are you going to be looking at the tier 3 QB's or so guys like: Romo, Rivers, Schaub and Big Ben(perhaps Luck and RG3 if you are a believer in em). Chances are some of those guys are peoples backups, if their starters you probably should bother wasting your time but if their on someones bench I think Thomas for one of them is fair value. If you get one of those guys and keep Cutler, you might be able to get by then just playing which ever has the more favorable matchup every week. It's certainly not optimal but given your strength at WR and RB (Sproles at the end of the4th in a PPR league is highway robbery) you can get by.
Out of curiosity, what is the lineup setup looking like in your league? I would guess given how you drafted something like: QB, 3WR, 2RB, 1Flex, 1TE, Def, K then your bench. If it's not that, then chances are you will wind up with 2 above average starters chilling on your bench. So then you have more assets to perhaps more up and target guys like: Ryan, Eli, Peyton, Vick, maaaybe even Newton or Stafford, but that depends on their teams situation and if you'd be willing to give up someone like Jones or Cruz.
The good news is you have a pretty solid roster. Very well done for your first time. You need to improve the QB position but you have the assets to do it. Just make smart trade offers and watch the waiver wire in your league, maybe someone pops up on ya. Your team is in great shape.
PS - Like the Celek pick, I think he's flown under the radar in most the late round TE hyping that is going on. I think he could breakout again this year.

I'm willing to move any of my WR's. I feel that I have enough quality depth that I can afford to lose any of the WR's and still have a strong team.
Unfortunately the lineup for my league is 1 QB, 2 WR, 2 RB, 1 TE, 1 Flex, 1 K, 1 Def.
I don't have any fantasy football experience, but have a lot of fantasy basketball experience. I went into the draft with the mindset of not reaching for any player. Most of the QB's went way earlier than I thought (ie Rodgers, Brady, Brees, Stafford, Newton, Ryan all went in the top 15).
Would a guy like Eli be a good target for my team?
How aggressive should I be about trading? Or should I just wait into the season and only make good/solid trades instead of rushing into finding an upgrade at QB.

Your target depends on what the other teams look like, and what can get you the best value. Eli and Rivers are both fine as starters, but it all depends on what the other team looks like and what they need.
You might also want to consider going after a better TE. Celek
