I reckon Kanter's expansive offensive arsenal is far more exciting to watch. Davis uses a lot of athleticism to spin rise up and shoot, whereas Kanter relies on his excellent footwork and shot acumen to get his shots off.

Are a few blocks per game really enough to make someone exciting?

Its not that he isn't amazing skill wise, he's a top 5 player, I just don't find anything exciting about his game per se. I'd rather watch a guy like KD, Russ, Lebron, Giannis, etc. He's a good defender and athlete, but I just rarely see a fantastic athletic freak-ish play from him.
