I just grabbed the Spartacus series. I like the idea of complete series that I may have missed over the years but really anything with a couple of seasons under its belt I can grab on DVD or Bluray
Good choice on The Shield. I push that on anyone whenever I can but so few people have seen it, really one of the best shows of the TV boom.   For DVD purposes 24 would be a good one, it's so many episodes and so many seasons that it will fill up a ton of time. Mad Men would be another not on your list.  Oz is another classic HBO that's probably out there on DVD quite a bit.  Actually, probably the best binge-watch show not listed there would be Lost, I'd start there. 
Your previous picks lean towards classic dramas, but for a comedy Cheers would be a good one, tons of episodes and very rewatchable, of course Seinfeld, Friends, Sunny in Philly also fall in the same logic
Also wanted to point out in case you're not aware that Netflix recently added the ability to download beforehand then watch later without internet.  That will open up your options quite a bit.
