It's risky. Same reason why players play for NBA owners rather than making their own league. Would you rather sign a 300 million dollar shoe deal or put up your NBA salary trying to build a business (while playing an 82 game schedule) that can compete with Nike and Adidas? What's more likely to pay off for you in the long run? You take the guaranteed, stress-free money and run.
Players do have their own businesses interests. Melo has his own clothing line, for example. Kobe invested in Body Armor to compete with Gatorade. Some players have the aptitude for business and become insanely successful like Magic. Others can't be bothered. And same shouldn't even try.
