I'm assuming you saw the presser or read his words somewhere, he said when he was running the route and turning into his break, he took a mental picture of where the safeties were. When that guy went by him whiffing the tackle, he knew that was the only guy who was between him and the end zone. And when he not only whiffed on the tackle but took out the only other Saints defender who was even close enough to potentially make the tackle, it was a no-brainer to keep running.
It would've been such a "Vikings" thing for him to step out of bounds (as he was instructed to do) in order to set up the game-winning FG and the kick goes wide. That's right up there with being tackled inbounds.
