Sacks= 3 points
INT's= 5 pts
Fumble Forced (FF)= 2 pts
Fumble Recovered (FR)= 2 pts
Safety (SF)= 2 pts
Passes Defensed (PD)= 1 pt

Yes, you have it right....though I'd add td, in case someone returns a fumble or int for a td...big play. I once put Safety at 5 thinking it should be more than an int (which I had at 4) but then realized they get 3 anyway for the sack and 2 for the safety which would be 5 regardless, so had to fix that, so a safety/sack wouldn't be worth 8.

They key is knowing how it is scored. I set up leagues and usually score it like 1 pt per tackle, 1 pt per pass defensed, 2 pts forced fumble, 2 pts recovered fumble, 4 pts int, 3 pts sack, 2 pts safety, 6 pts td, or something like that.
Then I usually focus on drafting guys who get a lot of tackles and sacks....typically LBs....but in my leagues you have to draft a LB, DB, DL and then you get a defensive utility so during a draft you just look at their previous seasons stats in tackles, ints, sacks, etc. ESPN gives option to look at this through a draft.
It's not nearly as random as something like K or team defense unless I guy like returns 2 interceptions for tds or something...but that's something that should be rewarded anyway. JJ Watt was a huge difference maker one year.
You can stream team defenses week to week with fairly good success...as a matter of fact that's what I did last year in one of my leagues and I finished first overall. DP and K are wildcards, there aren't very many metrics to determine their week to week viability. I don't like the idea of luck determining my outcomes. If it was up to me I'd get rid of both those positions.
I think streaming (if you mean working due to matchups works well too). I think a strategy could be used effectively too if you had a league that just had team offense instead of individual offensive players, but I like picking the players moreso than the teams.
I think kickers are kind of pointless and really random. Obviously you want one on a high powered offense, and potentially one that struggles to get into the end zone but it's still extremely random.

You talked about changing the league by adding a QB and flex since February. Thought it was a great idea but not once did you ever mention or bring up getting rid of DT/ST and adding DP. I love surfing Kickers and DT's. That is why I pick those two spots last and change them almost every week. I love that facet of fantasy football. And to be honest I find it extremely fun and challanging. Why is it every time the mods get involved with their two cents worth they always take the fun out of everything and drive people away? (Because they can get away with it) IMHO, adding a QB and flex is enough change to swallow for one year. Between teases, parlays, bets, pig skin pick em's, etc., I don't have the time during the week to spend endless hours monitoring defensive playoff sacks, int's, tackles, etc. And we as fantasy players have no God damn idea which defensive scheme a DC will implement from week to week. Its a damn crap shoot.

Change is hard. Picking D/ST and K last (which is what I would do too because they are mostly a crapshoot), it doesn't seem like it would be a big deal to get rid of positions you pay little attention to. And just hope to find a decent matchup each week. I mean I could see making a big deal about eliminating the QB or RB position, but K or D/ST?
Anyway, none of this is that big of a deal. I was just stating opinions early. I think people like K & D/ST instead of individual skill players and strategy on both sides of the ball just because that's how they've always done it. Once you start playing with 2 QBs and DPs, it's more strategic and fun....as you know, since you were against those before being in the other league and now have played 2-3 years with it.
