I used to spend time making food for big sports nights, but I found myself barely eating any of it because I'm so focused on the game itself. I usually try to eat right before or right after, or maybe during halftime (if I've got the time).
One of my favorites was my easy BBQ cheese steaks:
1. Start with a half pound of sliced steak.
Costco sells sliced NY Strip for anywhere from $9-$12 per LB, so I usually buy a 3-4LB package and split it into half pound bags which I stack and freeze. A half pound will give you about 3 cheesesteaks on an 8-10inch hoagie roll. If you don't have a Costco near you or don't want to spend so much, you can buy a cheaper steak, freeze it, and then slice it on your own.
In any event, once you have your sliced steak, I'd chop it into small pieces.
2. Slice and saute a small onion in a bit of neutral oil with seasoning salt and black pepper. Takes about 5-10 minutes on medium heat. At this point, preheat your oven to 350F.
3. Once the onion is soft and translucent, add in your steak, season it with salt and pepper, mix it up with the onion, and saute them together. This should take less than 5 minutes on medium heat. Don't overcook the steak, as it will cook very quickly if the pieces are sufficiently thin.
4. Take off the heat and add a squirt of your favorite BBQ sauce. I usually use SBR, but it's all your choice. Don't feel the need to add too much BBQ sauce. A couple TBS of sauce should be enough to give you a nice BBQ flavor. Mix it all together.
5. Take your hoagie roll. Slice it in the middle. Add the meat/onion combo. I usually top it with some pickled jalapenos and some shredded cheese.
6. Take a pan, line it with parchment or aluminum foil, and place your sandwich on it face up. Toss in the oven at 350F for 5 minutes. Broil for a minute.
Take it out. Add shredded lettuce if you so desire. Slice the sandwich in half. Destroy.
