Goodness, what are you doing to make it take five hours? I know Italians would frown on it, but lasagna does not need to be this complicated to be delicious.
I keep lasagna stocked in the freezer at all times (literally) so maybe I'm just used to it.
The ridiculous thing is I made tomato sauce and meatballs on Monday and I was just thinking of something to do with it. Tonight I made a fancy infused bechamel sauce, no problem. Made the homemade pasta and that was easy. It was then that I was feeling myself and how simple it all was.
But then I had to par-cook all those motherf*cking sheets. Around 20, with only one pot of water. One sheet goes in, wait 30 seconds, remove it to cool and dry, transfer to another sheet lined with parchment, repeat the whole process. I wanted to die.
It's in the oven now. **** better be the best lasagna I've ever had (tomorrow, when I actually taste it).
