Is there a list of which teams still have the option to amnesty a player?

A couple of names may be missing of this list, but I don't think I forgot anyone who's a plausible amnesty candidate (a contract large and/or long enough).
So, Tyrus Thomas, Al Harrington, Childress, Villanueva seem to be the likely candidates next season. Then a few outside ones - Kleiza, Blatche, Scola. Then it depends on how the Deron Williams situation plays out.
Funny how last Summer it was a bunch of guards + a combo forward and this summer the main candidates seem to be combo forwards.

It will be interesting to see if any of the teams that still have the provision available to them use it in a way that Cleveland did last year, when they took Baron Davis from the Clippers for an unprotected first then using their amnesty on him to free up cap space.
Maybe the Lakers could buy a lottery pick by taking on a bad contract. Ben Gordon and the Pistons pick for LA's TPE and Steve Blake. Gordon gets amnestied and the lotto pick takes Blakes salary slot. Pistons are then free to Amnesty Villanueva and are suddenly in a far healthier cap position.

It didnt really happen like that, and it wont happen like that in the future either. When Cleveland traded for BD, there was no amnesty rule. (Ultimately the rule itself ended way different than anyone would have guessed.)
More importantly, the rule says you can only amnesty a player who was on your roster when the new CBA was signed. No one can trade for a player with the opportunity to use their amnesty on him.

There is no benefit to amnesty a player unless the team is either trying to avoid the luxury tax, get cap room to sign another player, or free up a roster spot. Since none of these applied to Phoenix last December, there was no reason for them to amnesty anyone.
