I think some important people gotta go this episode to be realistic. My picks...
Jorah: he pretty much said his goodbyes to Dany and she reiterated that he’s forgiven for all past mistakes. He’ll fight with Heartsbane and do something heroic on his way out to redeem himself/standing in his home land/house.
1 of Brienne or Jaime: getting knighted is def her peak, and Jaime I think could die by doing something heroic enough to be put in the book of good deeds he’s always been concerned about, and dying in the arms of Brienne is a good send off. Plus Arya could use his face after to kill Cersei... both crossing her off the list, and fulfilling Cersei’s prophecy of being murdered by a younger brother.
Grey Worm: that last kiss kinda said it all. His and Missandei’s demeanor during it just spelled tragedy. He planned for the future with her which makes it even worse... like Pacino in Carlitos Way.
Theon: redeemed himself with Sansa, Jon, Yara, and now will with Bran n Winterfell. Looked to be shooting a flaming arrow next episode in the preview so shyt is def going down in the Godswood.. we see Jon there too about to fight.
Tormund: agree with everything you mentioned
Davos: twice in this last episode he mentioned how he survived the Battle of the Bastards and Blackwater Bay with no fighting experience... I think his luck runs out now. Plus he kinda got a second chance to do the right thing by steering the little girl who reminded him of Shireen, out of harms way the way he begged Stannis to do before she died.
Edd: mentioned his death too many times imo.. and it feels like that was the last time we see the old school Nights Watch crew together.
On the dragon attacking King's Landing, I agree that it seems too hard to resolve afterward. But we have seen the destruction of King's Landing foreshadowed a few times, so it's something I think is worth consideration even though I'm skeptical too. Dany and Bran have both seen King's Landing in ashes (or was it snow that the walkers bring with them?) and Cersei does have enough wildfire to blow up the whole damned place (and an army on the sea to escape with). There are ways to make it work, but I won't front that it would be a MASSIVE curveball and just too much of one for me to think it's legit. If they did pull that off though; it would be the shock value of the Red Wedding that Benioff has alluded to earlier.
On your death picks, I can see those all for sure.
I think Jorah or Lyanna Mormont; one dies one, lives to lead the house. So that Jorah pick definitely jives.
On Jamie or Brienne: The one thing that makes me think they might both make it is Cersei witnessing that Jamie loves Brienne at some point. I want that moment badly but I agree that Jamie has pretty much resolved everything and Arya wearing Jamie's face to take out Cersei would be an epic consolation price that I could fully embrace.
The rest, I don't have much to add because you've got it laid out really well.
One thing I do want to mention, is the whole "the people in the crypts are doomed" theory that's floating around could be a reason for Davos, Grey Worm and Sam to go in there and fight (with only one of them actually being capable). That could be how Grey Worm and Davos die, especially Davos with the Shireen-lite girl to protect.
But full reaching here, I think Melisandre will be the reason Davos makes it. She needs redemption for what happened to Shireen, predicted her own death in Westeros and represents one of the few people that could reasonably make a surprise appearance in the episode (Bronn being the other good bet imo). You can chalk that onto the pile of "my wishful thinking theories" though right next to Tormund becoming the Night's Watch commander and leader of the free folk who move in along the wall one.
