No idea what to do with all of the loot, do I pick it all up and sell it? Hold onto it? I'm a Witch so I have two wands right now with spells and support gems but I've come across a lot of weapons that it feels like I'll never use. I normally pick up the good ones and either sell them or keep them in my stash. I guess that's the point of these 11 days, just mess around and try stuff out.
For sure - experiment and see what feels right for you. I think it depends upon play style.
At the beginning of a league (or just starting out, for you), most players will pick up more than they would late in the league - they need to build-up their currency. That said, random loot won't net you much profit in the long-run. One of the things you might have picked up from the Engineering Eternity video series is that there are 'vendor recipes'. I'd focus on these for making currency:
Three-socket+ RGB (one socket of each color): Sells for a chromatic.
Quality gems: Sell gems totalling 40% quality for a gemcutters prism (e.g. 79% total = 1 GCP; 80% = 2 GCP, so make sure you sell as close to 40% as possible).
Quality flasks: Same as above, but sells for glassblower's bobble.
Six socket anything: Sells for 7x jeweller's.
My personal suggestion is to, as much as possible, just bank your currency. You'll have a better idea of what to do with it when you get to end game. Spending some chromatic here and there to get the colors you need to equip a great leveling item is fine, but you're otherwise going to want to keep stuff. Don't use jeweller's before end game. Ever. Reforging links usually costs a ton, so you want to be sure you do it on items you will use for a significant amount of time.
All this said, if you don't mind running back to town to sell stuff often, you can absolutely pick up tons of loot and sell it for some nice leveling profit. It's not seen as being time efficient, but all that really matters is if you mind it or not. You're not competing with anyone
